Its a hot summer day. Its impossible to eat hot food.
I call up Mr. travelling a lot if he would be home for dinner and what he wanted to eat.
So here were the instructions !
“I might have dinner on the way or may be not.
I don’t want to eat something heavy.
Don’t make anything hot, its too hot to eat.
Also I dont know how much hungry I would be.”
Well, with such vague instructions I look into the fridge and made a mental note.
Decided to make this pasta salad.
Well, pasta salad if he wants to eat cold and pasta if he wishes to heat it up.
Bought some bread if he is more hungry.
Cooked it and put it in the fridge.
Off we go to Grandma’s house and then took son to Chiti Chiti Bang Bang – a place I loved to go as a child.
Husband enjoyed this dinnner and I kind of invented a dish out of the ingredients in the fridge.
RECIPE: QUICK MUSHROOM SALAD
INGREDIENTS:
2 cups pasta
3 tomatoes finely chopped
2 tbsp tomato puree ( optional)
1 big onion finely chopped
10 cloves of garlic finely chopped
10-12 mushrooms finely chopped
Red chilie flakes
Basil
Wine 2-3 tbsp (optional)
2 tbsp of olive oil
Salt
Pepper
METHOD:
Start cooking the pasta
In another pan heat the olive oil, add the garlic, chillies flakes and onions.
Once the onions are pink in colour add the tomatoes and cook till its water evaporates. Add the mushrooms and cook for 5 minutes.
Then add the puree, basil, wine, freshly crushed pepper.
Once the pasta is cooked Al dente take out from the water.
Mix it with the cooked sauce.
Serve hot or put in fridge to chill.
This is a very good dish to make for pot lucks or picnics as well and it goes very well with garlic bread.
This is something I will LOVE! Perfect salad! Just add some chopped greens!

Then go to the fridge, open it, look at what is inside, THEN DECIDE WHAT YOU’RE MAKING FOR DINNER. Dinner is served
I’m glad your traveling man liked what was for dinner and sometimes the best meals are made without following a recipe. To my mind, recipes are just a stepping stone to cooking.
