Every Thursday my parents and thier friends meet up after dinner to catch up. They catch up, laugh, talk over snacks. These are all my parents childhood friends, years of togetherness. These are all my aunty uncles I have grown up with. They have been such an important part of my life, from all the festival celebrations to picnics to out of stations to dinners to every other get together they have been with me growing up….
They are such an amazing set of friends, has been with each other through all their thick and thin, I think a part of my life would be empty not having such wonderful fun-loving aunts and uncles. I don’t think I would have heard so much singling around if they where not there..as they have a habit to start singing at any occasion, I don’t think I would have known so many old song if it was not for them, I don’t think I would have grown up being such a filmi person as all my life I have heard them repeating dialogues of their favourite old films…I have learned so much from them…the spirt in which they stand by each other, the way they enjoy every small occasion, the enthusiasm and warmth they have for each other…the selfless friendship they have set an example to us…the best part is thanks to them I have so many more close friends as all us kids are also very good friends….

This Thursday they where going to meet up at my parents place. Since my husband Sid is from Indore, he suggested an Indori chaat night. I decided to cook Indori chole tikki and Indori aloo (potato) sandwich. Food inspired from our Indore’s Sharafa chaat street…
Below in the recipe of Indori potato sandwich.
4 large potatoes peeled, boiled and mashed
1 onions chopped finely
1 onion cut into rings
1/2 tbsp butter/ghee
1 green chilli cut into round pieces
1 tbsp Indori jiravan masala
salt to taste
white sandwich bread
heat the butter in the pan, add the onions and green chilies and sauté for a minute till the onions are translucent. Add the mashed potatoes, jeeravan masala and salt. Mix well cook for another minute and let it cool.
take two slices of breads, spread the potato mixture, add onion rings and toast it on the equity.
serve the tamarind chutney, ketchup. Sprinkle Indori sev on the top and jeeravan masala.
p.s. If you don’t have jeeravan masala, in the potato mixture add red chilli powder, amchur, a pinch of garam masala, pinch of pepper powder and salt to taste
