This recipe is from Tarla Dalal’s book, ‘The complete Italian cookbook”, my mom use to cook this pasta when we were children to make sure we ate our regular doze of spinach.

3 cups cooked pasta
4 cups spinach leaves finely chopped
1 cup green onions finely chopped
3 cloves garlic finely chopped
½ cup cheese spread
1-2 tsp of red chili flakes
1 cup milk
3 tbsp butter
Salt and pepper to taste
Blanch the spinach in boiling water for 1 minute. Drain and refresh in ice-cold water. Drain again and puree in a blender. Keep a side.
Heat the butter in a pan; add the spring onions and garlic and sauté for 2-3 minutes.
Add the spinach puree, cheese spread, milk, pepper, chili flakes and salt and mix well. Bring it to boil while stirring continuously. Remove and keep aside.
Re heat the sauce, add little milk or water if required. Toss in the pasta and serve with garlic bread.
