This pasta is my aunt Jyoti Patel’s recipe, at present she stays in the USA. She is one of the best cooks I know, she makes cooking sound so easy and a child’s play. When we visited her, even after a busy day running with us and working at her shop, she would be equally excited to cook for us. She is so fast in the kitchen that everything is a 10 minutes job for her. I always remember her cooking in huge qualities and sending take away to all her friends and family. Most important lesson in cooking I learnt from her from childhood, that cooking is an expression of love.
This recipe tastes best with OXO vegetable stock cube.
1 broccoli cut into florets and steamed
4 cups of penne pasta cooked ale dente
1 onion chopped
5 cloves of garlic finely chopped
2 cubes of vegetable stock
2 tbsp of olive oil
1 tbsp of butter
Salt to taste
In a pan heat the olive oil and butter. Add the garlic, onions and let it cook till the onions are transparent. Add the chili flakes.
Break the vegetable cubes in ¼ cup water and add in the pan.
Add the pastas in it and mix well and cook for 5 minutes until all the ingredients cooked well.
If you feel, add water to adjust the consistency of the gravy.
Add salt to taste but be careful with the salt as the oxo cubes have salt with them
Serve with garlic bread or mashed potatoes.
