This recipe was developed from David Rocco’s show who hosts a Italian cooking show on Fox Traveler. I absolutely love him for his passion and love for Italian food. His show format is very interesting. It gives a very warm feeling. I don’t remember the name of the recipe but roughly remembered the ingredients. When I made this pasta they turned out quite good.

red gravy pastas


[Serves 2]

2 tbsp olive oil
8 large tomatoes boiled pealed and puréed
1 small onion chopped
1 small capsicum chopped
8 cloves of garlic broken
8 olives chopped [green or black]
Chili flakes according to taste
4 to 5 basil leaves
4 to 5 parsley leaves
About 2 tbsp old wine [optional]
1 to 2 tbsp grated parmesan cheese [optional]
About 250 grams of cooked aldante pasta


In a pan heat olive oil, add the garlic and onion till they turn transparent.
Add the capsicum cook for a min, then add the  tomato puree, basil,parsley, olives , chili flakes, wine and salt. Let it cook for about 10 mins or till the water has almost evaporated from the mixture.
Add the cheese and let it melt, switch off the flame.
Mix the sauce with the pasta and cook for 1 min till the pasta is heated.

Serve with garlic bread. Garnish chopped paisley and parmesan cheese if you want. 

 If you prefer the taste of wine, you can add more wine while cooking the sauce.
